Dear Guests and Friends of Dieci Boutique Restaurant, today we are proud to be the first and only restaurant in Bulgaria awarded 3 Stars in the Sustainable Restaurant Association’s Sustainability Certification.

 

The Sustainable Restaurant Association, headquartered in London, UK, recognizes the world’s most sustainable restaurants, and we are proud to be among them.

Key Details:

  • Founded in 2008 (per Impact Report and About Us) and widely cited as 2009 in external sources.

  • Mission: To build a food and beverage sector that is environmentally restorative and socially just.

  • Core Program: The Food Made Good Sustainability Standard, launched in 2010 as a global benchmark for sustainable foodservice.

The criteria are established at an international level and applied consistently across all participating countries. They are reviewed annually to align with the evolving sustainability standards of the Sustainable Restaurant Association.

 

This reassessment is conducted in collaboration with national and international sustainability partners and industry experts. The Sustainable Restaurant Association Certification is based on compliance with rigorous, internationally recognized criteria across key areas of environmental and social responsibility, including water, energy, waste management, sourcing, staff and guest engagement, supplier practices, and broader sustainability initiatives.

 

Compliance with these criteria is verified through a thorough application process and independent third-party assessment, including periodic on-site evaluations. Certification is awarded on an annual basis.

The Sustainable Restaurant Association program is managed by the independent, not-for-profit organization headquartered in London, UK, dedicated to advancing sustainability in the global foodservice sector.

Dieci Boutique Restaurant is fully sustainable.

 

We are energy self-sufficient, water independent, and recycle all plastic, paper, cardboard, metal, and Styrofoam. As a result, we generate virtually no daily landfill waste.

All glass is crushed on-site using a specialized machine and collected for transport to a certified facility, where it is safely processed.

We grow, harvest, ferment, and compost our own fruits and vegetables. We practice responsible hunting and source only certified meats and fish from non-endangered species.

All dairy products are organic, and our eggs are certified free-range, produced under humane and ethical conditions.

Dieci Boutique Restaurant maintains its own beehives and harvests house-produced honey. Our honey is entirely natural, derived from pure bee pollination, with no added sugars or additives.

We do not use pesticides or chemical fertilizers in any indoor or outdoor spaces. We believe in preserving natural ecosystems, allowing birds and insects to thrive as part of a balanced cycle of life.

Zero Waste is our Core Philosophy

At Dieci Boutique Restaurant we produce our own souvenirs and artefacts made from recycled metal, paper and plastic materials and sell them to our guests. By doing this, all our guests feel involved, inspired and indoctrinated into the importance of supporting sustainable actions at our restaurant and everywhere else.

 

All the money gathered from our homemade artefact sales is devoted entirely and 100% to paying willing members of our small village to go out there and collect all glass, plastic, metal, paper, cardboard and any debris on the streets of Devino and our nearby forests. In this unique way we responsibly incorporate our community and boost in our village’s members the core values of Reduce, Reuse and Recycle; which are the core values of Dieci Boutique Restaurant and Green Key International
